Well I think that has something to do with Japan having this whole "journey not destination" thing when it comes to romance. There's also generic conveniences of the past to consider like specific archetypes winning in more than one occasion so it's just easier to copy that.

The problem I find is that authors are set from the beginning on who the guy will end up with and they'll refuse to change those plans. So when a separate girl ends up being much more likable and suitable for the guy, they'll be forced to lose.

I also think that Hinata should have been more involved with the story on some level. It's nice that the underdog won her man, but a bit more prominence would have gone a long way. In the end, all she ever accomplished was "motivating her man one time" during the main story. Aside from the she was a sideline character whose crush was used as a running gag through out the manga.
