Yes, when I started watching anime 10 years ago I downloaded a broad array of shows, but it works both ways when you are new and don't have a reference point.
Some of the first shit I saw and liked turned out to be garbage while some stuff that I didn't like turned out to be really good.

Honestly, no, at least not in terms of worldbuilding and such. Generally anime are short series, so you can't build as large of a world. Long-running anime are typically shallow endless episodic shows or dragged-out shounen.

Since I started seriously watching anime about three years ago (also), I have always been very selective. But stuff like Claymore and Casshern Sins: I just can't be entertained by that. Even more adult stuff like LotGH is often something of a chore for me to get through.
