High fantasy pretty much means 1-dimensonal villain.
If you want someone to not lose interest, then the villain has to have at least one not-evil aspect, one redeeming quality
This is more of a personal idea i have, but there are hundreds of stories were the good guy is pretty bad, but since he is the protag of his story, we like him and his actions
I've always wanted a story were you see from the villains POV in the start. The villain is on what he thinks is the path of justice, while the real protagonist acts as the antagonist who wants to stop his goal at all costs.
Then at some point, let the POV switch, and let the reader decide which one is truly righteous

Make a story in which the high fantasy villain never existed, but was a mythos.
Insert your regular shounen pro tag except add a bit more moral-relativism to his ideology so that he justifies some of his actions against the idol of the imaginary villain. Give him just enough information throughout the series to account for a pseudo-logical justification for the sacrifices/evil-choices he makes along the way. Then have him discover that there was no great boogeyman, and that the life he carved out for himself was decided by him alone.

"Generic high fantasy" is pretty broad.
Do you mean you want to write a simple short story? Or do you want to write a full book? Or a series? Is it directed at children or adults? Men or women? Or is it meant to have broad appeal? Do you want to go full generic or do you want to shake things up? What do you want the main character to be? How about romance, do you want to include romance? There are tons of other shit to ask about too.
You might think writing is easy but even writing something like a short story is difficult and time consuming.

I haven't done any writing outside of some writing prompts they make you do in high school years back, so I wanna start small with a short story. I haven't put much thought into the audience or romance. But I do know that I want it to be fun to read and hopefully non-generic as possible. I'm playing around with the idea of a hero with a non-conventional weapon like string manipulation (think Walter from Hellsing) or a summoner which is rare in the story's universe since most summoners are looked down on for being weak fagets who need to summon others to do shit for them. Again, mostly just ideas I've been throwing around, and it took me 2 days to write a simple short story back in high school so I can see how much harder it would be to write a full scale series, or even just one book

You're biting off more than you can chew.
The thing with short stories is that you're EXTREMELY limited in what you can actually do, which is why good short stories focus on one thing, usually some kind of humor or moral lesson. You're also going to be limited in your characterization, as a you still need to do exposition, describe settings, and develop plot. That is going to really limit the amount of space to make a non-generic protagonist, particularly for high fantasy.
I'd recommend looking around online for guides on writing, and reading some short stories yourself to get an idea of the kinds of things you'll have to learn about.
Of course, if you aren't trying to be an actual writer and just want to write for yourself, you can write whatever you want. You just probably won't make it professionally unless you happen to be a genius writer.
