Yes they've shown combat with police, drones, and wild animals. They've shown crafting and mining. They've shown that you can craft a type of ammo hat blows a literal chunk out of wherever you shoot it. In the video, the creator gathers some resources, crafts this ammo, then shoots the ground a bit away from him. A big hole is made that leads into a large tunnel network that expands through the whole planet. He walks in, looks around for a bit, then fires another hole at the wall to make an exit he jumppacks out of.

What's the appeal of exploring for the sake of exploring when the whole world is procedurally generated? Daggerfall got boring as shit to explore in its world the size of Britain because of that, I can't fucking imagine a game attempting to be the size of a galaxy not suffering the same problems.
The game seems too ambitious for its own good. I'm cool with a low stakes atmospheric exploration game in space but without being able to handcraft any of the environments and trying to make something on the scale of a galaxy it'll probably fall flat. You either need a tighter experience or they should have gone all out with shit like crafting, territory control and multiplayer in order to justify the size of its universe and give the player more to do on these nothing planets.
