Personally, I do not imagine an immediate, huge economic impact of doubling the Federal minimum wage. Unfortunately, the BLS will not gather 2015 data for their Characteristics of the Minimum Wage report, but we do have their 2015 data

Now there are large engineering groups in Mexico and India. Initial issues with quality control have been addressed, and now quality is just as high, if not higher than quality at home.

Raising the minimum wage will only worsen the current condition and people will end up with less and less jobs because of it. You cannot force companies to keep work in a place where they'll loose money. (Unless you are trump)
The best solution would be to regulate prices on a federal level so companies can profit from operating and employing people in their own countries, and workers can get a fair compensation for their work.

You don't just make a machine appear out of thin air, you have to pay people to develop it with engineers and programmers working constantly to ensure it does its job with a negligible failure rate, or pay a company to use their model and have it customized to your needs, all while having your PR department try and figure out how to make the shift to machines. All of these costs add up to more than just the electricity the machine uses.
Making a gigantic fucking jump will really push more companies to pursue these long-term savings.
