What's the best way to grate carrots?
I love carrot cake but I fucking hate grating carrots. I don't actually own a box grater, just a panel grater and a microplane, and it takes an arduous eternity with either.
What's the best tool for the job?

you know, you could just puree the carrots in a blender.
here's a cake that was made with carrot puree. a little different flavor and texture, but it works, and it's still good.

I just use the back edge of my knife. Not the most efficient, but I don't really grate carrots that often either or in particularly large quantity either.
