Unfortunately for you the best watching order involves reading the original VN first because the 2006 anime is mediocre at best, the 2010 movie is utter shit, Fate/Zero is a prequel that assumes that you read the original and starts throwing spolers from minute 1 and leaves many thins unexplained, and the 2014 UBW anime had some references to make Zero fit better into the canon.

Going the anime only route right now is really hard, because Heaven's Feel isn't out and complete yet.

Once that is, the best way to go about things would be 2006 series -> 2014 UBW series -> 2017~ Heaven's Feel movie series -> 2011 Fate/Zero series.

Just watch the ones from ufotable, meaning:

Fate / Stay Night: Unlimited Blade Works and Fate/Zero. The ones by DEEN are absolute trash and not worth your time.

The 2006 series is not "trash". It's low budget, but it does an adequate job of adapting the first route. Its biggest fault is when it tries to merge in anything from the other routes, but until another adaptation of it comes around, it's the best way to experience that story without reading the VN.

Though you should probably read the VN regardless.
