7 is the most stable and compatible version, by far my favorite
Windows 7. It has the best compatibility with almost everything out there. I managed to remove most of the bloat and it only consumes 1.0 GB of RAM on boot. Not gonna switch anytime soon.

Windows 7 is best. However if your concern with 10 is the privacy issues, Microsoft has actually added a lot of the spyware to 7 and 8 as well (in optional upgrades) which you need to remove

Going with 7 here too. The concerns over 10 might be exaggerated, but Microsoft's arrogant attitude (and indifference) toward responding to consumers' concerns is disturbing.
I have not read a single thing that genuinely makes me want to upgrade, despite the best efforts of tech sites that coincidentally have Microsoft adverts.

Basically you disable services/programs you don't need that take up precious CPU and RAM resources.

True but it's always good habit to keep things uncluttered and throw away things you don't need like in real life.
Maybe those 5-10 programs/services don't use much CPU and RAM resources but if you really don't need them then there's no harm done in disabling or deleting them completely altogether.
