Recommend me some anime/manga/WN/LN that have a fallible MC who starts lower than everyone else, has to use strategies to overcome his shortcoming, steadily improves and doesn't suddenly get some bullshit OP power boosts. AKA underdog main characters.

Some examples would be the main characters from series like Kaiji, Mx0, Ability, or Tate no Yuusha. The feeling that the main character doesn't always win and leaves the reader uncertain of the outcome of each battle is what really gets me hooked to a series.

Are you looking for series that specifically revolve around competitions, or are you just looking for "loser-fiction"? I can recommend The Dwarf, if you want a novel.
