For classics stuff Kurosawa and Yasujiro Ozu are essentials.
For modern japanese movies: Takashii Mike, Takeshi Kitano, Shunji Iwai and Sion Sono.
There is obviously much more and the ones I listed to you are some of the most well known, but it's a good starting point.
