What is the best way to watch videos on PC? i recently bought one and i have window media player by default but is that any good?

VLC or Media Player Classic are both good though. Choose whichever.

I'm not an expert on what it does, but it allows MPC or whatever else to be able to playback file types as well as give it other options. Although I feel like MPC itself has probably been updated to be able to play a bunch of file types, but maybe I'm just an idiot.

You don't need any codec packs with MPC-HC, it will work fine out of the box. If you want to optimize it for certain types of playback there are specific addons you can install.

VLC is alright, but MCP-HC (with CCCP codec pack) is the way forward, but the codec isn't necessary unless you watch anime.

It isn't necessary if you watch anime either, it's full of shit that's already standard in MPC-HC and tons of other shit that's already depreciated. Just install MadVR and your subtitle renderer of choice and you're good.
