A lot of creative liberties will have to be taken for Alola being literally being a straight line.

Regarding that, its not just that there was "too much water", but that they did nothing to make navigating it better.
They could have done like the sand in Unova and make only certain shaded water have pokemon encounters in it.
They could have added an option for a close up map on the lower screen to make it easier to tell where you were exactly in the water.
And they could have replaced the HM function for DIVE with a "Devon underwater propulsion unit" to use one less...
