I would advise not taking on the UK though, because it's very difficult to naval invade. If your navy is comparable then it's possible, but still difficult.
The USSR isn't super hard to beat. They have a lot of dudes but it'll be a good way for you to learn the warfare side of the game. They'll also be spread across two fronts, fighting in Armenia and Ukraine. And you said they're at war with Germany, so you can give them some help.

Bought EU4 and all the expansions (not the unit packs and music crap though) and just started playing my first game.
Picked Holland but I am having trouble breaking free from Burgundy, it's already been 25 years and I'm still their bitch. With mercenaries I am able to field a force of 20 regiments or so but even after them getting their tits slapped by France they still have an alliance worth 45-50 regiments.
Should I just be patient or what? They're allied with Gelre who took over Friesland and Utrecht with their help, I'm like completely boxed in.

Same. Paracucks tries to defend their national ideas and birdmana and whatever, but sliders are such an eas way to represent a country prioritizing X overy Y (and to a specific degree) in a way that makes sense and doesn't need some mana abstraction.
In EU III, the French army was strong because France diverted funds away from the navy into the army, and focused on quality over quantity. You could easily reverse this and make France a naval superpower that on land relies on its massive manpower and zerg rushes to keep the enemy at bay.
In HoI IV, the French army is strong because "muh élan", something another nation (like for example Austria) can do literally nothing about: the French army will always be stronger.

I'm not convinced of Gibraltar's importance. In his WWII memoirs Churchill discusses the prospect of Spain entering the war with nonchalance, describing it as a mere trade of Gibraltar for the Canary Islands. Malta was significantly more important.
You're right that Suez is important, but this was for two reasons which are both in game. The first is that the Japanese pushing through India and the Germans pushing through Egypt could have met up in the Middle East if Egypt fell, thus giving Japan access to the Mediterranean and Italy/Germany access to the Indian Ocean. The second is what you said about having to go round the Cape instead, which is also in game, and it does delay convoys and make them more susceptible to attack.
