Escha and logy was way better than ayesha, and was the best dusk trilogy game in my opinion. The lack of time limit in Shallie kinda ruined it, even if the time limit was incredibly forgiving in Escha and Ayesha it still gave the game a better sense of pacing. I'd recommend you give Escha a try if you enjoyed the arland games. Also play Atelier Rorona Plus, it's pretty great.
The fact that Sophie has no time limit is making me really leery about it. It's getting decent reviews as far as atelier games go but still.

It's pretty easy really. You're just seeing the guy go through the filters to select specific items.
Basically you pick up items in the field
Each item has quality and traits and properties
You select what you want to make from the list
It has required ingredient types for example "plant" and then you can use any kind of plant type like magic grass or flowers
