Ludyx Gundyr doesn't drop a soul. Champion Gundyr takes place in the past (The reason Ludyx doesn't drop his soul is you took it). He chose not to link the fire, didn't become a lord, and took control of Firelink. The Black Knights followed him and killed everyone besides the maiden at the shrine. He took the bonfire coiled sword and killed the firekeeper with it by plunging it through her chest.
Then some time passed. This is where shit gets tricky. If you don't arrive at the dark firelink then another unkindled finds the firekeeper, takes the coiled sword, and kills Champion by thrusting the sword through his heart. Then this unkindled goes on to link the flame and is one of the souls you fight in the Soul of Cinders boss fight.
Now you, when you start a new game, find the "dead" Gundyr but he's corrupted by abyss shit. This means that the unkindled that killed Gundyr had to have traveled to the abyss and his path through the world can be tracked by abyss corrupted enemies. It is not clear who this is since there is no Atorias or Manus phase in Soul of Cinder battle. Probably somebody new.
Now if you do go to dark firelink you find the coiled sword, you fight champion and beat him but do not kill him with the coiled sword and don't corrupt him with abyss, and you also find the firekeepers eyes. This leads down the age of dark ending which means you take the place of the unkindled that would have linked the flame and instead bring about darkness.
This all becomes very confusing because time is fluid around the land and you can cross into the future, and past at will. If you kill Champion then technically you shouldn't have found Ludyx at the beginning of the game but since time is weird and the normal firelink is clearly accessible to npcs in the world it's not an illusion like the hunters dream. Instead the theory is that dark firelink is being held as a point in time on purpose like a bubble, probably by Darkseeker Kaathe so you can bring about the dark.
