3 is the most accessible.
1 is great but very simple. It's important for the story.
2 is just fucking amazing but you'll need a translation patch
4 is decent but the story is very dry. Combat is nice but 5 does everything better
5 the best one. Covers the entire series arc, great combat,neat graphics, cameos galore, and a killer fucking soundtrack. Translation patch came out a few years ago
If you'll only play one play 3. Easy to get, lots of translations, and not nearly as complicated. It also has 2 storylines so you'll get a little extra replay value

X-COM is incredible. I also recommend the Long War mod as it adds a ton of gear/weapons/new classes/etc.
It's got an overarching research progression kinda like a Civ game you build an army of characters that are customizable at your option. They level up and get new abilities and eventually can bet tested for psionic powers.
Combat reminds me of Wastland 2 but with more abilities and options.

They're both good. Days of Ruin is a bit low on content, but is otherwise the best game in the series. Dual Strike has a ton of content and is generally pretty fun, but suffers from some significant balance issues.
Not Advance Wars. It's too simple and it treats war like high school.
