There's a bunch of stuff that changes after the first Nemesis fight. RE3 has a ton of almost-unknown content, you'd be surprised:
- if you go back to the street in front of J's Bar, the lights will be out, and the stairs won't be accessible anymore
- if you go back to the warehouse, Dario will be outside the truck dead, and you can go in the truck to find his diary
- if you go back to the cable car right after meeting the mercenaries, there's be scene of Mikhail fighting zombies, he'll kick the red barrel at them and shoot it
- if you exploded the red barrel beforehand, he'll throw a grenade
- near the beginning, where you hear a police car door being hit, if you return there through a certain path, a girl will bust out of the car and will be killed in another room
- if you wait for a minute in the same room as a Drain Deimos (the hairy four-legged thing) without triggering them (they only react to sounds), they'll spit some kind of cockroaches, an enemy you probably never saw before
- if you don't choose anything during those story choices, you usually take damage, but never outright die
- during the fight against the worm at the cemetery, you can shoot at the knocked lamp post (that cutscene is there for a reason) to electrify the puddle of water and kill the worm way faster
- you can meet Nemesis in the power station instead of near Umbrella's Office
- Carlos can be killed by Nemesis when he's an NPC

Dino Crisis. Almost a carbon copy of Resident Evil, but with dinosaurs.
Parasite Eve is also worth looking into for the creepy vibes and fixed camera angles. Less survival horror and much more so action RPG but still very fun and worth checking out.
Alone in the Dark is what inspired Resident Evil but the first three games are very, very fucking old and dated. Some people love them, some hate them, your mileage will vary.

Dino Crisis is nice, only thing I disliked was the music getting really loud when Dinosaurs come out of nowhere or chase you into other rooms.
Onimusha Warlords isn't scary, but the game has a great atmosphere and wonderful prerendered graffix, gameplay is similar to early RE games but instead of using guns you'll be using melee weapons.
Check Kuon for the ps2, I haven't played this one yet but you seem to play as a shrine maiden.

I recently just completed Alone in the Dark 1 since i never finished it as a kid. The game could be beaten in like 3-4 hours of casual play, but longer if it's your first time. It's really quite basic.
No one should really play it unless to say they've beat an old classic.
For e.g. there's items in the game you absolutely need to progress forward that can be broken or wasted before needing them, which means it's an effective game over.
I've never completed any RE past Code Veronica, not counting REmake because that's just 1 on steroids.

Also, the Tyrant was x1000 times freakier than the mutated dad. I remember going through the B scenario even more terrified since it takes a lot of the situations you've grown comfortable with and upends them.

RE3 added a bunch of unnecessary fluff to the formula. The only good thing that game out of that game mechanically was the quick turn. The ammo crafting, the constant Nemesis encounters, etc. just weren't particularly well done.
