What you are thinking is a theologian's way. The bible is fictional. You cannot say "This guy match the fictional description of our son of god. He must be the factual son of god." Theology goes nowhere.
Scientifically you cannot prove his existence either. For many hundreds years in its hay day, Christianity "canon" constantly evolved, much like fairy tales (because it is). What form of Christianity they practiced back then is very likely not what we do to day. That's why Jesus is a Jews and we are Catholic. All this stuff influenced and bastardized the factual, recorded history of it. To the point where it's impossible now to determine exactly whether he was was real or just an imagined figure.

It's not poor illiterate yokels. Books and manuscripts aren't widely produced things you can buy at market for cheap, they're not for poor landworkers.
They're for the prestigious aristocracy and scientists and philosophers of the time (the church).
But a snail is a sign that meant enough to the highest echelons of society through to the writers and artists of these manuscripts.
