Resident Evil 4 and Killer7 had their superior versions on the Gamecube, and I'm saying this as someone that owned a PS2.
RE4 is kind of a moot point because of how much that game has been ported, but Killer7 is still only on GC and PS2. The PS2 version suffers from missing particle effects and insane framedrops in certain areas.
At the time, the GC version of RE4 was superior, as the PS2 had muddier graphics along with pre-rendered cutscenes, whereas the GC cutscenes all occurred in-engine.
Fairly certain that the reason Killer7 and RE4 received rushed PS2 ports is because they failed to sell on the GC. I forget, but I'm fairly certain that there was a 3rd big Capcom game that began as a GC exclusive before being ported over to the PS2.
