I just built a gaming PC and I was looking into truck simulators, so here's my question:
I've never played a truck simulator, should I buy American Truck Simulator or Euro Truck Simulator 2?

ATS has prettier graphics than ETS2, but ETS2 has a much more detailed world, the last expansion alone is more detailed than the entire ATS.

Depends where you want to drive. SCS are fucking awesome, and are keeping both games updated. Features that are added to ATS and also added to ETS2, generally.
ETS2 has more content at this point, ATS has loads of content "coming soon". There are plenty of mods for both.
Get yourself a nice wheel as well, it makes the entire experience much more immersive. I have a driving force GT, it's great.
