They've deliberately designed a progression on the journey to the centre of the universe. The planets you start off with will be easier and the later ones will be harder. They've said this in a video.
So it's not just aimless procedural generation. They've put a lot of design into what's generated.

I'm admittedly kind of interested in being a space bandito, but I'm sure it will go exactly the same way Minecraft did where the combat isn't very fun and the exploration becomes dull and repetitive. The secret at the center of the galaxy will be posted all over /v/ 3 days before launch and will likely just be some kind of warp drive to visit wherever the hell you want. And what's the final verdict on multiplayer? I remember hearing a lot of the "Everyone's connected to the same server but it's unlikely you'll run into anyone" thing, but what if I want to fly around with a friend of mine? Do I need to go full Dark Souls and pray his summon sign will show up for me?

That will take effort because you will probably start on the opposite side of the galaxy to your friend. You can see your friends on the galactic map, but you can't warp to them. So the best thing would be if you both travel to the galactic centre first, then you'll be within travelable distance of each other.
