Jellyfish Princess is a bit under entry level, but the story telling itself is good. Claymore is kinda like Berserk with vaginas, and not as good.. but still not bad.
Then you got shit like Mushishi that is almost 100% atmosphere and fables, which is really neat.
And then there are the sagas like Fairy Tale, Bleach, DBZ, One Peice. Inuyasha is like Fairy Tale and Bleach, cringy but engaging. Naruto is like DBZ and One Peice, in that the fights and the time spanned are the best part. One Peice has less filler, but you can always just skip that shit anyway.

The anime isn't hated so much as animeonly's are hated. The anime is actually a very good adpatation, with only SDC falling flat. The issue is, the anime brought a lot of people who never read the manga, and thus only experienced the first 3 parts, acting like they're huge fans and getting upset that people are discussing the later parts. It's made worse by the fact that part 1 and 3 are generally considered some of the worst parts, and I personally would consider Part 2 one of the worst as well. Just think of it as how people who only played Fallout 3 and 4 call themselves huge Fallout fans.

However, you should know, Part 7 is very long and due to the amount of horses in it, it would probably he difficult to animate, so I wouldn't he surprised if it never gets animated, and if it does, it will either have hige amounts of it cut out or it will be Berserk 2016 levels of quality, so you may want to just read it at some point, so the experience isn't ruined on you.
