I've never hardened Lelianna, but for Alistair you simply need to have a decent relation with him, have him in your party while in Denerim and he'll prompt you saying that he has a sister here he wants to meet, following the questline to completion gives the opportunity to harden.

Not him, but reading Brent Knowles little blog about why he left Bioware when DA2 came along was pretty interesting. I also agree with that anon about ME1 being the turning point. After it's massive success Bioware decided that every game needed to be like it, with a similar party system, the same conversation wheel that everyone uses now and the same dlc practices.
