"Yoshimitsu" is the name/title of the leader of the Manji Clan, a Japanese group dating from the Edo era. Every generation the new Yoshimitsu must kill the old one to become the leader of the clan and earn the name. It seems to be tradition for the Yoshimitsu to have an outlandish appearance but there's no way to tell how they achieve the skeletal/biological/laser sword appearances that appear. It's probably a reference to Kabuki theatre which is full of crazy costumes including those which you can't tell if it's hair or part of the outfit.

Some combos work on large characters only, some are axis dependant but in both cases it's not a big deal if you don't bother with them.
Knowing how to defend yourself against each character is crucial and that's Tekken's biggest hurdle to overcome. Stuff like which moves are unsafe, when to sidestep/crouch/hopkick/interrupt, their frame traps etc. The list varies in length and detail and there are general guidelines how to defend versus each character.
You could always pick one character and try to be super aggressive but it's only going to work until a certain point. Then again, if you bother to learn frame data, you're already doing more work than average. As long as you find it fun, you should progress step by step.
