I found this a curious statement and went to do some research on the matter.

Here's an excerpt I found from Wikipedia.

So the first true action-RPG was a japanese game.

There you have it folks, not only is Dark Souls a JRPG but by extension all action RPG's actually stem from and are influenced by japanese games like Dragon Slayer and Nihon Falcom

I don't really see how it resembles most WRPGs at all beyond the setting/tone and not really being like a JRPG, to be honest.
It's not like an old CRPG or modern Bioware game, or a sandbox Beth game, or a Diablo clone, or a Wizardry/Eye of the Beholder/Ultima Underworld style dungeon crawler, or a roguelike, any other subset of WRPG I can think of.

It is more like a WRPG than a JRPG if just because you can attack and kill most any NPC, though.

There aren't that many mostly because it doesn't fit the atmosphere. The Executiner's Chariot was called Silver Chariot before the revs thought of a name though. Imagine if Miyazaki did something that wasn't dark fantasy and what he'd reference there though.

Both DeS and DaS1 were going to. DaS2 was going to have loli Emerald Herald as well. Dunno about DaS3 but you were going to be able to trick Oceiros into tripping over and falling into Ocellotte, killing him, which is why he goes apeshit in the second phase. They were all cut because killing children in games is still pretty taboo, though Bloodborne did it just fine.

Thats actually the result of having the same sources for inspiration. Obviously they, due to a lack of natural understanding of european medieval history googled "medieval torture equipment". The lizards are a coincidence. The pile of humans is based on a statue I dont remember the name of. The bloody baby is just standard horror fare. The sword is however probably a Berserk reference.
