Guild Quests let you fight monster combinations or monsters you normally can't fight in the caravan or hall. You get them by doing expeditions or street pass.
And those are weapons of choice for most people since Switch Axe is simple to use and Charge Blade is OP apparently.

In case it's not obvious you don't have to stand still and aim in 1st person, you can just use quick aim in 3rd person or you can even take a moment to quickly adjust your aim in 3rd person.

The most recent ones are on 3DS, but Monster Hunter Tri is on Wii and Monster Hunter 3U has a WiiU port. You can emulate Monster Hunter Freedom Unite on PPSSPP, but it's not the most beginner friendly game.
I would recommend 4U or Generations if you have a 3DS, 3U if you have a WiiU, and good luck with Freedom Unite otherwise.

It's different for each weapon. Striker loses part of Guild's moveset and sometimes does more damage with other particular moves.

It's not strictly better, it's different. They draw from different loot tables depending on if you cap or kill. However if you don't need something from killing it, just capture it instead being that it's faster, etc.
