I do upgrade my provinces. Income buildings first, then farms generally for the rest? I just never have enough income because my taxes are low to maintain provincial growth and my armies are always large so the upkeep kills me. It was the generic one. I didn't use it correctly because although it showed that its guns fired directly from the front, I thought "that can't be" and so I positioned it broadside against the enemy ships (so, on its side).
Apparently it was better off firing from its front. I didn't micromanage it because I thought it would be fine against some enemy wood ships.

The main force of their army came in as reinforcements which made things easier, I had the Samurai Retainers outside the castle walls with the gunners and bow samurai above them, so they held up their melee guys as the anvil, the matchlocks and bows were the hammer

Yeh, the generic ironclads can be lucky shotted and instant killed like the wooden ships. It's one of the reasons I skip building them and go straight for the unique country ships.
I've had some legendary games on the brink where the foreign ship swings it around just because the enemy can't touch my coasts anymore.

I'm wondering if the enemy had researched armor-piercing shells, or at least the heavier ammunition one step before it. It would make a little more sense that your ironclad got one-shotted then.
But yes, the Kotetsu really shouldn't be turned broadside on, if possible. Its thickest armor and its biggest gun is right in the front of the ship, so it should be pointed straight towards the enemy. What most probably happened to you was that when you turned it broadside on, a lucky shot by the enemy managed to punch straight through the armor and into the engine room, which detonates the boilers and kills the ship instantly.
You can do the exact same thing to enemy ships, especially if you micromanage and aim the shots themselves. The generic ironclad, Kotestu, is actually really excellent for this. Its giant cannon in the front has long range and is fairly accurate, so if you aim right underneath the smokestack of enemy ships (using armor piercing ammo) oftentimes you can just detonate them outright.
