The controls feel very strange to me, though I am playing on a gamepad. Is there any way to tweak the controls to be drift-happy? I've found I'm always wiggling the stick around like crazy trying to countersteer and keep the wheel held at the right angle but the cars fight VERY hard to return to center, harder than it seems they should. Short of getting a race wheel and pedals like I've been thinking of doing for a long time for Assetto Corsa or Project Cars or soemthing, I'm kind of at a loss.
Oh yeah, and also: in the drift mode, the cars pretty much countersteer themselves. What the fuck? Is it because they anticipated a casual audience who wouldn't be able to handle consistent steering controls across modes?

The cars have a lot of grip, so it holds on to the road even when you go full retard.
What you need to do is use weight sifting to upset the balance and yank the car into drifting for a short while.

Not true. Also try other cars, AE86 is legit garbage in 5 for drifting due to the traction control mechanics and lack of manual transmission. The ruiner and better aston martin are the only cars that most people can make drift, but if you're really skilled, the most expensive RWD ferrari is a monster.

If I load up a drift event, start driving in a straight line, and say a right corner is ahead. I steer right, let go of the stick, and the AI automagically countersteers left to swing the back out and initiate dorifuto, instead of having the car return to center and smash into a wall like it would in other game modes. I can even control how much he's countersteering just a little bit with how much throttle I apply. If I move the stick opposite the AI's countersteer, he jerks the wheel and points the nose of the car into the turn more. If I move the stick in the direction of the AI's countersteer, the car comes out of the skid.
If I hooked up a wheel to this game, would the car's in-game wheel match my wheel's movements 100% like I've seen in videos of games like Assetto Corsa, or would the AI still help? Also, to be honest I kind of like the way the AI aids countersteer in the drift mode because mapping a stick to the wheel also means assigning a wheel lockout and sensitivity to the stick which makes it less accurate for steering. If anything, I'd like to copy that steering AI over to the other modes for super slick driving.

What you are describing is what people experience in Need for speed shift 2015.
I have no idea of such things in Need for speed shift2. Nor did I ever notice it, since the wheel turns exactly where I point it.
There is how ever a small delay on the when the game registers your wheel turn and when it turns the wheel, but that can be changed in the configs.
