I've been playing Replicant, and I never should have listened to the people that say, "it's the same game just with Papa being replaced by Onii-san in dialouge". The main plot is the same, yes, but this is a vastly different character in terms of their approach to the world and there's a ton of scenes take on a whole other meaning, especiallyDevola and Popola's betrayal, which is probably the most impactful scene in the game to Brother, even moreso than Yonah being taken away from him at the end of part 1.

Well for one Brother actively likes to go and do all those dumb tedious jobs because he just wants to help, and it affirms his self-worth. Weiss even at one point says "God, how do you acually enjoy this?"
The biggest difference between Papa and Brother is that in Part 1, Brother is hopelessly idealistic. He is a stereotypical JRPG protagonist to almost the point of parody, but that's to show how much he changes. In Part 1 he's still a kid at heart, someone who believes that when you're home, you're safe from the evils of the outside world.
The thing is, Papa Nier doesn't change all that much between parts 1 and 2. He changes, but it's subtle because he had already been hardened from decades of living in that dying world. Brother was just a kid, andwhen the Shadowlord and Jack of Hearts took Yonah they didn't just take Yonah, they took Brother Nier's entire world. Those cheery views, his happy-go-lucky yet budding mature attitude, the opinions that drove him to believe in people, the comforting seclusion of his village and the reliability of the people within it. He can't handle it and he just breaks down into a shell of a person from what he was before.
He's left to grapple with a grim reality which he simply can't deal with. His failings take a harder toll on him physically and mentally in a more visible fashion as we can clearly see a change in his personality and appearance. He acts more violent, puts up with less bullshit, and is prone to angry outbursts. We clearly see how he's changed, he talks a lot more about how he's "going to kill every last Shade" and his life's goal is no longer just about protecting Yonah, it changes to killing Shades.

The first half of nier doesn't make much sense with father nier. It's more of a coming of age story.
The only reason father nier exists is because they thought playing an old man would make it easier for the west to swallow.
With all the censorship complaining going around you'd think this would be a big deal but it's still praised.
They also removed emil's gay inclinations toward nier in the western release.
Also as an aside, there are little things that make more sense with Brother Nier. Like the fact that Nier seems to have so much trouble wielding two-handed swords. Papa's immense frame should be able to swing much faster, but it makes sense for Brother's scrawny frame. But they have the same swing speeds in terms of gameplay.
Also, Kaine and Nier falling in love (the latter returning her feelings being much more pronounced with Brother than Papa). Keep in mind that with Papa, Kaine always essentially knew the same person. With Brother Nier, before she was petrified she knew him as this weak, overly idealistic little shit that she would constantly berate for his naievete and basically tagged along with because he was the first friend she ever had. Also the age difference, befor the timeskip he's 16 and she's 17, so she sees him as a little brother. When she's unpetrified she's still 17 but he's now 21, and is not only physically older than her but has matured from a little kid into a real man (albeit an incredibly sociopathic one) within an instant. So it's not surprising that her heart is starting to beat fast around him.
Emil is basically the same, just instant of seeing him as a surrogate father, he's just a big brother. The cooler big brother most kids wish they had. Nier though has a lot more sympahty for him in part 2, as both of them had lost their sister.

At this point, Brother Nier is now basically forced to turn his violent rage upon the only two people in this world he could call his parents.

He may know how to kill things, but that doesn't always cut it! He'd have never been able to survive the early orphan years without Popola finding him work and Devola taking care of Yonah while he was away. These two adults he trusts more than anyone else in the world. When everyone else seemed unable to help, they were there. Father Nier may have needed the work, but he's a fully capable grown man who (probably) has some sort of talents. He could always be a bodyguard or something.
When Nier's village became dark and his house became empty and lonely, the Twins were always there. They presumably have been helping Brother (and Father) with tips and leads for the 5 year gap, so even when everything else changed for the worse, Popola and Devola remained the same. The Twins betraying Brother Nier isn't just a heel turn, it's them effectively taking the last part of his old life away.

Well I mean, if you say that then Zelda has no gameplay, because Nier is basically designed to play like a Zelda game. It's not the best Zelda clone in the world but it has the formula down pretty well.
