McCree wasn't from the first set of members, he joined years later. He does look middle aged though. Original members were Ana, Soldier, Reaper, Reinhardt, and Torjborn (maybe one more person?). All of which are pretty old looking now.
Mercy is a genius doctor that pioneered nanomachines in use of science and can fucking revive people. I'm sure "aging" is pretty fucking easy to get around for her.
