Wii U is the definitive version. SEGA fucked up the PS3 port of Bayonetta so badly even Kamiya regrets it ever coming out.
Trying to do the last jeanne fight was pretty shit on ps3. Can not do the button mash punching things fast enough with the frame rate collapsing. Add in the gimmick stage you have to do every time you want to retry that fight and its just a mess.

I beat the hell out of it on PS3. Went back and played it on wiiu later. The latter is definitely better, but the ps3 version held up just fine for me.
Dropped frames only become an issue if you suck.
