Rose stopped Sorey from killing Forton and did it herself because if he did it, it would have been from desperation and not heavily premeditated. Rose has all this intel on Forton and the Pope because she got a contract to kill the Pope, so she has no guilt in killing Forton.
Zestiria has bizzare morality, but the world works by those rules. If Sorey killed her, he'd turn into a monster because he would regret the choice and want to change things (negative emotion = malevolence). Rose already decided to kill her, so won't regret her choice (good).

Vesperia aged well because of the cell-shading but the characters are small scale (and thus so is the rest of the world around them), which takes a lot less effort to make. The new Tales games have characters actually full scale.
