Each bachelor/ette is initially locked to 8 hearts, which is the friendzone. (Non bachelor/ettes have 10 hearts, which is the bestfriendzone)
You can unlock the rest of the hearts by gifting them a bouquet, which makes them your girl/boyfriend.
You CAN do this with multiple people, and they WILL get jealous and call you out on this.
This is how it works in theory, but in practice I've found that you can go over 8 hearts if you continue gifting them stuff... they just don't show graphically, but the relationship goes up. So I've ended up with a couple of romantic scenes that should be locked for me behind the bouquet requirement.
IMO this whole gifting system is a bit lackluster.
Call me a faggot but after you gift them the bouquet the only way to advance should be some kind of dating system.
Right now it's "THANKS FOR ALL THE SHINY ROCKS I LOVE YOU NOW MARRY ME AND LET'S FUCK", fast forward to two kids, and that's that.

This is implemented in the game to some extent.
Talking to them every day boosts their affection, and not talking to them for a day slightly lowers it.
Participating in scripted events with the characters also adds a good chunk of affection.
So it's not JUST gifts. Although to be honest they contribute the most, especially the birthday ones.

Props for fixing the fences each season or so though, I'm on year 4 and haven't had a need to replace them yet.
Protip: in order to save you some time (the biggest challenge in the game is time management imho), invest in sheep as opposed to cows, pigs or goats.
Pigs are a pain in the ass in general with having to let them out and back in every single day and then scavening for truffles, so fuck that.
Now with cows and goats you never know whether they will have milk on any given day, so you have to waste time running around the barn with 12 huge ass animals, navigating around them as if you were in a maze, trying to milk them all and losing precious time when they're not producing.
With sheep you walk into the barn and wham, you can instantly see whether they're done doing their job or not.
As for the coops, I recommend making them all rabbits, because with the artisan perk you'll make a decent amount of money with producing linen from fur and wool both, plus they don't cluck like crazy which is really fucking annoying with a combo of ducks and chickens and they're downright anemic and tend to stay in one place as opposed to running all over the coop.
For the greenhouse, all ancient fruit + wine barrels, use 6 spaces for the sprinklers (think it was 2 good quality and 4 iridium ones to cover the whole area, but I'd have to check), you don't have to do shit for days and when you're done you're rolling in dough.
