I think The Forest is better for that than The Long Dark, although they're both pretty good, The Forest just feels... comfier I guess, actual survival is easier because you can breed rabbits and grow berries for food.

I haven't played in a while, last I remember they had the mutants being able to wear down your fortifications.
TLD doesn't really have combat, if you find a rifle that works nicely but ammo is sparse so you have to use it sparingly, wolf attacks you mash a button/key to deal with and if you have a knife you can stab them. Bear attacks you have to play dead for.

Don't get me wrong the game is awesome it just took me dozens of dead/mangled/drowned/frozen/poisoned/starved/crushed/robbed/stabbed characters to get the hang of it.
Even after several years in the wilderness you make a bad roll ad get 1hko'd by a lynx and that's it.

That guide is pretty helpful.
Also start your first few characters as fishermen, not having a fishing rod is a death sentence because RNG won't throw elks at you every few days.
Fishing with a spear/javelin is just a slow way to starve to death.

At first glance it looks like a poor man's The Long Dark. But you have a pack of dogs you take care of, as well as village building, and NPCs.
I haven't played it at all but it's been on my watch list. It's still in alpha or something.

Ever played dwarf fortress adventure mode? Like that.
If not familiar with that, you stand next to the enemy and choose the weapon to attack with, with ranged weapons you use "t" and aim with the cursor that shows up.

It's grid-based so aiming should be self-explanatory (you move targeting cursor over desired target with ranged weapons, with melee weapons you press directional key).
As far as hunting goes, you can passively hunt with various traps (from deadfall traps of various sizes to hundreds of meters or even kilometers long trap fence constructions that funnel animals passing through to trap pits) or actively hunt with hunting dogs or yourself. Hunting solo, you can try to ambush the animals (very difficult) or persistence hunt (often after a failed or partially failed, managing to get an arrow or javelin in but not enough to deal crippling damage, ambush) in which you track the animal until it's too exhausted to escape.
