It really is the easiest souls game. Seems each game gets easier and easier. Gameplay mechanics get better resulting in the player to get faster and stronger, by time BB and DaS3 rolled around i could run circles around enemies and was nigh untouchable.
The slower movement of DaS1/DeS worked perfectly in regards to bosses. You moved slow, bosses moved slow

For me DaS3 was kinda hard because I play defensive with a focus on shields and this game... doesn't work well with slow characters. Some bosses are fucking sanic, but I learned to deal with it. Overall, the game was harder than normal till I got a 100% phys greatshield and the str to use it. Then everything steamrolled.

Pretty sure you're just bad. I also found BB hard and DS3 a cakewalk. It may have something to do with the poise nerf not really affecting me, since I play with no shields and instead just dodge, and friends who always played with 'tank' builds saying they had a hard time with DS3.
I've been replaying both DS3 and BB lately, and I'm still feeling challenged by the bosses and even some normal enemies on BB, while DS3 just gets a bit challenging on like maybe 3 or 4 bosses towards the end, and everything else is just insanely easy. The lack of rally and the smaller number of estus flasks hurts at first but it ceases to be a problem after a little while. There are a couple of tough bosses, the jailers in Irithyll Dungeon are terrible, and the giant ballista in Smouldering Lake is annoying, but otherwise the game's not that hard. There's certainly nothing in it as difficult as Defiled Hotdog or the Orphan of Kos.

They always seem to group up and attack in sequence when I do that. Kiting is hard enough on its own since rolling is so broken in DS2. I can manage crowds in any other Souls game or Bloodborne, but this one is so clunky and stamina wears down so fast that there's a huge chance of something going wrong even in basic one-on-one fights.

You doing no damage isn't the boss having high defenses. He literally cannot be damaged anywhere but his weak spots.
He has 6 moves, and they all have a specific direction to dodge in to avoid them. Acid poo sucks but it should be the only damage you take.
You can either smash his ballsack first to skip the mooks (he loses them in stage 2), or smash them in the order which exposes you to less of his (slightly more damaging) hand attacks. The order is left hand-> left leg->ballsack->back->right leg->ballsack 2

With Greatwood some his pods are pretty well hidden and he has huge sweeping attacks that are so slow they throw me off, and Sage is 2hu so I end up accidentally rolling/moving into a projectile getting staggered and fucked.

Bloodborne will always be hardest for me, unless Dark Souls 3 brings some ball crushingly hard bosses.

The only boss in DS3 that I can say is difficult is Nameless King, and even he doesn't come near to assblasting status as the majority of Old Hunter bosses.
