I usually just watch whatever are the best matches for Marvel. It's a double edged sword because 90% of the matches are as dull as corroded metal, but that makes for some pretty damn interesting turnarounds when someone is able to pull out of what appears to be a bread and butter infinite and uses his minuscule opportunity to wipe his opponent with some of the flashiest stuff around.
But overall I don't watch much of EVO besides highlights. MKX just is never interesting, SFV isn't as fun to watch as SF3, MvC3 is aforementioned as duller than MvC2 outside of highlights, and both Tekken and Smash have unbearable personalities that suck whatever enjoyment can be found from their moments. Still, I hear Killer Instinct and Guilty Gear are fun, so I might watch them this year to see if I want to play the games.

Mostly hyped for Tekken 7, also SFV since it's e-sports main attraction. UMVC3, seeing it every year makes it a has been aka old news, wish they would make MvC4 but know that won't happen soon. Guilty Gear and Killer Instinct was fun to watch without knowing much about the games last year so the same for this year and MKX will be interestingMelee will be alright but not the focus for me.
