Am I missing something significant depending on which one I chose? I could totally end up getting both if it's worth it but if I had to choose one, which one?

Birthright is more like Awakening and allows you to grind, Conquest has much harder maps with more varied objectives and doesn't allow grinding.

If you want to count every route as a separate game:

Conquest can be a good start if you see no shame for resetting a chapter when things go wrong.

Unit balance. Everyone except foe the Royals, children, Reina and maybe Silas and Kaze are completely worthless and unusable. For a route that sells itself for being able to use everyone, you really can't use almost anyone. Specially Nohrian units, they just got trashed. Gimmicks are boring things that just forces you to wait and delay the game a lot and can mostly be bypassed by fliers too.
Overall the whole thing is not fun.
