The racism thing is overplayed. She's a religious xenoskeptic deep in human territory and a family history of being burned by authority. It's a very realistic and surprisingly nuanced portrayal for a modern game.
In addition, since the game was all about how humans are newer upstarts to the galactic community, she fulfilled an important role of giving the player character a "maybe we should think about humanity first" voice. Having multiple points of view allows for increased roleplaying.
Furthermore, she's shaped by the experiences you have. If you play a xenophile paragon her positions on such matters softens over time, as does her character. If you play as a xenophobe renegade, she becomes more gung ho and hardline.
She's a realistic character that makes the roleplaying more vibrant.

I agree completely. While it's been quite some time since I've played the games, I want to say there were other npcs that did the whole xenophobic better watch out for those aliens thing, but they weren't handled nearly as well as Ash. It always boiled down to, "Gotdamn aliums here to take our jerbs!" So even if you were totally okay with the different species and weren't racist, it made you think about trying to keep humanity's best interests in mind while also balancing the other races. I mean I kind of thought her character was a little annoying in the first game, but she got better over time.
