I've always thought of it as more of the capabilities of technology rivaling the capabilities of magic, not just outright denying magic. From what I've seen, the reasoning is normally because magic is some kind of supernatural/inter-dimensional force that can be "summoned" and utilized, but not everyone can do it so then technology comes on the rise to deal with magic for those who can't use it.

I would say the helmet is still a big mistake because if the enemy has a thin sword like a katana they can just stab the opening in the helmet.

That's hardly a problem. It's such a small (and moving) target that the chances of someone slipping a blade through in the heat of combat is very low. Even in real medieval combat, in which helmets had much larger openings, stabbing through them happened after you got your opponent wrestled down and pinned him under you.

That paladin's job is probably killing legions of moderately skilled dead, leading lesser paladins, and maybe fighting particularly big dead solo. It's fair to assume he won't be fighting many swordmaster katana twinks and getting stabbed by a slashing weapon through his slits. As long as he doesn't piss off a fencing master/duelist, his eyes will probably be fine.

According to the wiki a 3.5 true dragon great wyrm has a strength of 47. It's not too difficult for a Barbarian or a martial class to buff it higher than that.

In the medieval it was more than likely you were going to be fighting another person in a similar suit to yours. For normal medieval suits would be fine but to move around in something like THAT takes a great deal of strength and stamina. There's a more than likely chance the person in that suit would be exerting greater deals of energy.
The katana isn't the ideal tool to fight someone like this but it has the bare minimum to at least inflict injury because it has the traits of speed precision and just enough stabbing power to pierce flesh. In a (1 vs 1) The match would go to the katana user, to add more people to both sides would be the paladins win every time.Wait, what would happen if a ninja came up from behind him?

I wouldn't if wizards were actually fun to play, but almost always the warrior class is more fun and you get more out of the game since you actually have to engage the enemy up close and make use of all the mechanics that way.
