I've heard before that the shit shield in Bloodborne that is basically just there as a middle finger to people who want one is actually decent in PvP or something.

The Exxpcalibur in Dying Light is also fantastic. It's meant to give you tons of experience when killing enemies, but it breaks super quick and doesn't do much damage then. But if you use the strong attack skill with that weapon (broken or not) it can ragdoll enemies so hard it either flings them away from you or outright kills them due to the impact to a wall or floor. I used it all the time since it'd launch enemies even though it was broken.

The shield is great at reducing most bullet damage/riposting to nothing if you use it right.

Dog Residue in Undertale is like this. It's basically just a joke item, but the shit it creates when used can be sold infinitely for as much money as you want. Add to it a chance to get a healing item that heals a random amount. While the random healing factor can fuck you over it still is basically infinite, so who cares.

Not to say Undertale is difficult enough to warrant its use, but it does still break any small amount of difficulty the game did have.

Banana peels are extremely robust in SS13. Especially in servers that haven't removed sliplocking yet.
Even without sliplocking, splashing water on the ground is still pretty goddamn effective.

Portrait of Ruin has a cream pie as a subweapon for Johnathan. It's about as useful as it sounds, except that it's Dark element, which the Richter boss is weak against, and it travels in an arc which makes it perfect for dodging his attacks.

I think there was a build with duel broken straight swords in Dark Souls 2. They were crazy powerful when infused with mundane and at a very high level (we're talking 300+)

Final Fantasy Tactics has two versions of a legendary weapon, one being a joke, but still incredibly useful with certain skills.

The most notable example is Dark Cloud 2's weapon build up system, where most of Max's weapons can be used jokingly at an early part of the game, but come equipped with badges, giving them extensive properties.

I assume you're talking about if you keep Plank past the starting zone, it eventually gets upgraded to one of the strongest one-handed blunt weapons in game if you beat Eddy's brother and socket it with the Emerald Jawbreaker.
