I missed out on Crash back in the day but this video really makes me want to play the old games. Should I start with the original or Crash 2?

Start with 2 since it has a little of everything, after that is up to what kind of game you want to play.
Crash 3 is just crash 2 with more gimmicks and a time trial for every level, the first one is a simple platformer and crash team racing is a great kart game.
Crash 3 is pretty much for speed runs, crash 1 is for actual challenge.
By the way i highly recommend playing in emulator since the first game doesn't allow using the analog sticks, it makes it a lot easier to time your jumps that way (i don't know if they added that feature in the PSN version though).
