I completed all the routes in undertale, took 15 hours. Can confirm it's shit.
Neutral and pacifist are both boring as fuck and never present any sort of challenge at any point. The story and setting are weak and the characters range from enjoyable yet one dimensional to unlikable trash.
Genocide was tedious unfun bullshit except for the two boss fights it has, which were actually amazing. Maybe if the whole game had that kind of intensity it would have been good. Hell, if genocide had maybe 6 bosses like that, and had actual difficult and varied enemy encounters during the grind, it almost could have redeemed the whole game.

I do get there should be the ability to get those fights post gold end but it also defeats the narrative point as Undyne is one of the only beings in the monster world determined enough to fight you beyond what should be possible and sans has a degree of meta knowledge and simply fights dirty rather than honorably.
It's like people whining the Neo fight is a let down, because that's the point. Mettaton never wanted to kill you in the first place and his normal EX form already is glitchy and drains power faster than your mom eats cakes so Neo is him trying to bluff you into running or buying time for others to escape.
