You have to find the badges to get all the extra weapons. They don't drop off of enemies, they don't come in chests, and they don't just sit around like they normally do.
Unless you have the DLC, in which case you'll find a lot of them just laying around in the Nightmare.
You've gotta kill optional bosses and do optional areas and shit if you want to get new weapons since that's how you get badges.
And each weapon has two variants with different gem slots that you can buy in chalice dungeons once you've gotten the regular versions.

I've been playing games for almost 30 years and Demon's Souls is one of the greatest games of all time, and the Souls combat and gameplay mechanics are truly unique and masterful, and there's nothing else that even compares to them.
I do think Ninja Gaiden has better combat, but it's worse in most other aspects, and is so different in gameplay and mechanics from Souls that it's really not comparable at all.

I think it's a lovely series starting from King's Field, to the few side games, all the way to latest Dark Souls.
My only issue with the series is that I think it goes down in experience quality with each game you play. I think that's because the more time you spend playing the entire series, the more you're used to how things work. It degrades the experience. These games really shine when you see them with a fresh pair of eyes.
Personally I think whatever game you played first is going to be the best. Of the Soulsborne series, I played Demon's Souls first and it was amazing to me. Looking at it now, compared to the others in the series, I can see where it's flawed and definitely worse in terms of combat and enemy combat, but it's still my favorite. Dark Souls was my next game and while it was a neat and isolating experience, it lacked the initial wow factor as well as creativity that Demon's had.
Most people seemed to play Dark first, so I know a lot of people consider it the best one. It also doesn't help that each game strives to become more unique than the previous games and creates a lot of very lame, over designed monsters, bosses, set pieces and gear.

Let's not kid ourselves. DMC is shitty autism bait with punching bag enemies in which you can just stand in place cycling moves while occasionally jumping or dodging, and throwing in a taunt for good measure. It just favors autistic recital of weak combos to fill an arbitrary style meter when that's not the fastest or most efficient way to take out enemies.
Both movement and attacks themselves (both you and the enemies) are slow and clunky. The movement is awkward and not fluid and miles below the movement of NG or even something like fucking MGRR. The jump is pisspoor and because there's almost zero lateral movement it's just used for iframe spam.
The game also lacks depth (and no having an arbitrary style meter doesn't change the core mechanics); maybe if every style could be equipped simultaneously it would begin to have some depth, but having to choose between dodge, block/counter, or having more than one attack button? What a fucking joke.
Only having two weapons at once combined with shallow movesets cripples the combat and ruins variety. There are so few moves for each, nothing on the level of NG2's 15+ base attacks (counter, strong, weak, strong hold, weak hold, strong pause, weak pause, forward strong, forward weak, 360 attacks, OT, UT, bow, shruiken, air combos) for each weapon + dodge/block, and this is without even going into the 50+ combos for each weapon. And not to mention NG2's more fluid movement, more strict timing, more smart and adaptive enemy AI (especially bosses), and the weight given to moves by not being able to simply hop right out of them into a full i-frame to apex jump whenever you see an enemy do one of their predictable tells before an attack.
And before you say childish nonarguments like "git gud" yes, I am an avid action game fan and have played them for many years. And yes I am a master at the genre. And yes, of course I have beat the game on DMD; I would never critique a game without mastering it first.

I have a hard time ranking souls games because I don't want to classify any of them as "the worst one." They each have their strengths and weaknesses and I love em all for the things that they do.

Dark Souls has bad games too, 2 and 3. Counting good games on this franchises would be: GTA, has 3, Vice City, San Andreas, 4 and 5. DMC has 1, 3 and 4. RE has 1, 2, 3, 4, CV, Outbreak Series and the REmakes. My pick for the best franchise would be RE. Das 2 isn't as creative as the other two. Namco has more of a hand in it, since the first game was such a hit. That's probably why there's more memeish stuff like the gratuitous difficulty of sections like Horsefuck Valley or Darklurker areas. Or Sir Alonne's memory. Or the entirety of Dragon Shrine. Or the Shrine of Amana. Or the Undead Crypt.... And also, as mentioned the toning down. People, including tweens were latching onto "Prepare to Die".
But I digress. Dark Souls 2 doesn't feel like a sequel, even though the fire is a part of it's story. It goes in a different direction in terms of it's design, and while change can be good, it can also be bad. Had Dark Souls 2 been more cohesive and had the same connections between areas that the first and third games had, it might have been better received as a sequel.
