I've always had the mindset as long as you have good weapons and okay stats then levelling up is pointless.

Level and especially VIT are more important in BB than any Souls game because of the fuckhuge damage bosses do. Rapehorse's charge and jump attacks would likely one-shot you at anything less than 35VIT

Leveling matters. Of course if you are a try hard you can do a level 4 run but if you are normal non autistic person you are going to need to level up vit and end and then whatever you need for the weapons you want to use.

And if you dont upgrade your weapons and fortify them you are fucked.

I fought Ludiwg at SL45 , had around 25Vit. Though I did had 2 Clockwise and 1 Anti-Clockwise runes.

Though I ended it on SL55 with 5 more points in End/Dex. It was fun honestly, fuck, Laurence though, wish I had more health against him, but it was hard and fun.

I was using BoM entire time.
