Games with character creators tend to be the worst to roleplay in and least inspired. They somehow trick the autism in people into seeing something in the game that isn't actually there wherein they write the entire games storyline in their own head rather than them seeing the game for what it really is and roleplaying within those boundaries.
This is what sets the difference between something like Skyrim and Planescape.
Planescape you are presented metaphysical questions that the answer to can vary from person to person depending on your personality; there's a depth of roleplaying available if you put yourself into the shoes of the character. The very theme of the game, 'What can change the nature of a man,' can cause one to reflect on what it would take to change themselves and, for whatever conclusion someone comes to, they're right.
Skyrim is just a bland sandbox with things to hit where you play dress-up and write up some retarded background story in your head that NOBODY in the world will EVER respond to.

Might and Magic are more dungeon crawlers. There's a difference between roll playing and role playing.. I haven't played all the DnD gold box games, but I've played enough. They were okay at the time, but really don't hold up well at all, especially since I recall you have to fricking look at a manual just for the small parts of story you get when the game tells you to because they're so old even text was limiting the space (Unless there's some updated versions I'm unaware of).
Ultima 4-7 are okay. They're the only ones I personally would recommend from your list for anyone looking for roleplaying and not what is basically an action RPG.

As for why it's shit:
-Typical wrpg dirt aesthetics. Everything is brown and varying hues of such. It's ugly as fuck to look at and get engaged in.
-Flowery, overly verbose dialogue. You'll be screaming at the screen, yelling for the shitty writer to get his head out from up his own ass and get to the damn point. The droning dialogue makes Xenogears disk 2 look like a short story.
