Some monkey called Specter got some helmet that made him smarter and used other monkeys to create an army to take over the world, so its up to Spike and in the other games, Jimmy, Kei and Yumi to stop the monkeys with some gadgets and tools.

Essentially the Professor was working on a helmet to boost intelligence for non-descript 90's reasons. The circus monkey Spectre found and put on the helmet and using his massive newfound intellect he replicated the helmets to a lesser extent, distributed them among other monkeys, and they launched an attack on the Professor's lab. They gained control of the professor's time machine and ended up using it to take control of the world.
So that's why there are apes, and they escaped from the zoo presumably.

Rachet & Clank hands down, great humor, amazing levels, great music, and each sequel added so much over the previous.
Jak & Daxter was great, but got baited by GTA open world fad
Sly was short, and later game forced you to play as his friends
Ape Escape is cumbersome trash and becomes less fun as the you progress through the game, good music tho
