How come all of my school projects and my first 3d game looked like absolute shit that wouldn't have even been acceptable in the mid 90's?

I'm assuming it's because I had a really shitty teacher who never taught us how to do stuff properly and always showed us lazy ass shortcuts and ended up drilling shitty habits into our head because he just wanted to get us out the door.

I don't know how shitty your teacher was, anon, but you shouldn't blame other people for the quality of your work. If your teacher doesn't teach you the cool stuff, you look it up and learn it yourself (back in the day, people didn't have 3d schools, or internet, so consider yourself lucky).
If my game looks like that (it looks like shit, though), is not because I'm better than anyone, but it is because I spent >9000 hours more than my classmates working instead of sleeping or playing videogames.

So just do it!

I don't know if we'll have a demo. Would really come down to if the programmer would want to make a separate build again for that and I don't think we'd release the outdated PAX build publicly either. Hoping we'll have the game done around october though, but we may delay release until next year if a Holiday release looks bad.
