It's admittedly designed well and written better than you might expect, but it's not that good. Especially not on the level that the fandom has made of it.
The reason people latch onto it is honestly the same reason people latched onto homestuck, or onto steven universe. Colours make different characters immediately distinguishable, and furthermore they typically have some unique symbol or quirk or so on. People love that shit. People love just about anything where you can make a 'sona. It's about being unique. About wearing who you are, your identity, on your sleeve.
Difference is even stuff like Homestuck and Steven Universe have more going for them than MLP. A lot. Homestuck did a lot of shit in one big package that stood out from how people understood the medium it came from. Steven Universe has way more of a plot than it initially let on, and a far darker setting than we realize is hinted at between the lines.
MLP is... MLP. They can make as many different types of ponies as they like, but at the end of the day it's still moral-of-the-story slice-of-life shit. Better written and better voiced than should honestly be expected from it yes, but unless you're going to tell me that there's suddenly intrigue going on between the different kingdoms, and behind-the-scenes politics are going on where not-so-kind and far-more-sinister ponies are plotting for their own gain and suddenly it turns into romance of the three kingdoms or game of thrones but with ponies, it's still going to be nothing more than a children's show, for children, that won't grow up with the people watching it.

You progress through the bosses. It's got some pretty damn good building potential too, but it's a lot harder to do than anything you might make in 3d like moiney crafta.
There's different classes, equipment tiers. You explore the world, looking for various new weapons, pieces of armour, accessories, and tools. Your progression doesn't just improve your ability to kill things and not get killed by things, but your movement capabilities also improves by leaps and bounds, from a simple double jump and runfast boots, to grappling hooks and rocket boots, to being able to combine your boots together and stick your double jump accessory in a balloon so you jump even higher, and so on. Your ability to build also expands quite a bit as well.
Your various accomplishments in the world can unlock new npcs with new things to sell you (and occasionally entirely new functions), and not even halfway through progression, just when you think you're getting pretty gud and wrecking everything you see, your world turns full rape mode and suddenly literally everywhere there's new monsters, materials, drops, and so on.
