SA was the best GTA to date. Did the subtle humor thing previous GTA games were known for and had characters you really got invested into.
4 cocked it up by going grim dark realism, but never really delivering on the hard hitting drama that should have accompanied that tone. It felt flat and forgettable all around.
5 tried too hard to go back to old GTA humor and ended up feeling like Saint's Row.

IV is my favorite for a lot of reasons, but the technological advancement blew everyone out of the water. The game looked and felt like nothing we've experienced before, the entire city was a physics playground and it takes a drooling idiot who just wants to shoot everything to not realize that. The story was so good, the characters were so memorable, the world felt so alive, and the dark humor was a breath of fresh air in comparison to the blatant humor in the previous games.

Poor mission variety is the main thing for me. Most missions were "Chase car to specific spot, get in firefight in the destination". Those types of missions are perfectly good and all, but they made up 80% of them in 4.
A lot of people didn't like the world either because it was small and gritty and grey and shit. I personally loved it because I like New York's atmosphere.

Most missions aren't good, but it was a nice change of pace for those who had been playing the series for some time. Going out with someone, having some big talk about life, the characters felt more "real" and so did the city. Niko is definitely a great protag.

Been with the series since GTA1. I bought that game for my very first PC and I had endless amounts of fun with it. There we're mods and entire overhauls for it too. I still remember Burger City very fondly.
I really loved 2 too, especially it's setting.
GTA 3 was amazing but GTA VC was the one that really drew me in and the first one I 100%'d. SA was great too, near perfect game for it's time, nothing much else to say.
IV was rather disappointing on many fronts, since they did a reboot of the series world and try to go for a more deeper and edgier story instead of the light-hearted over the top silliness that came before.
Despite TECHNOLOGY and graphics there was lesser to do in the world, even the packet hunting (flying rats, I think?) was completely useless except for achievements or some shit. At least for hunting down cocaine packs or spraying graffiti in previous iterations you got rewarded with something of value in-game (Guns would spawn at your safe houses). The story was alright for the most part but you are just done with the IV after completing it.
V's biggest mistake was the 3 protagonist thing.
