They can have higher AC (armor score) than fighters while being able to cast spells.

Druids and Clerics were engines of destruction simply because they were fighters and wizards combined, and the only class that could keep up with them were wizards because of metamagic feats.

You could but it'd be difficult without a dedicated healer. Most spellcasters can learn cure wounds and other classes have some sort of self healing though, so you can scrape by until you get a chance to do a short/long rest.

Yes, the healer in Planescape: Torment is quite optional. She's a good character though so many bring her along.

With enough Potions you can do it in Baldur's gate 2 as well, although it is expensive. Once you get to summoning Planatears though you can safely dump any clerics because Angels are so much better.

An important thing to understand is that Skills are no longer the basis of virtually all checks, they're just a sort of modifier to the overarching Ability Checks. Sure, in 3.5 you would sometimes make a pure Strength check, but now Athletics is always considered a Strength check with your proficiency bonus added for Athletics training. The significant thing here is that while there are only 18 "skills," you can have proficiency in other things like tools - even specific games and instruments are basically their own niche skills, which handily represent professions as well. The format of Wisdom (Survival) follows for, say, Intelligence (Navigator's Tools), or Dexterity (Thieves Tools) - which is not a slight of hand check or anything, just a theives tools check. The other thing this format does is allow your DM to ask for, say, an Intelligence (Diplomacy) check if the situation is all about making a reasonable argument.
All skills are listed on page 174 "Using Ability Scores." All tools are listed on 154. It also wouldn't be hard for the DM to add other proficiencies in the same vein as these tools.
The main way you gain tool proficiencies is your Background, which the DM is encouraged to let you customize by swapping like-for-like and such (though skills are typically worth more than tool proficiencies).
Rogues and Bards are supposed to be super good at skills, what with getting 4 proficiencies from class and 2 expertise skills at level 1.

Modern D&D uses most of the same core classes as 3.x. You get a pool of dice to roll for healing during short rests, which are restored at a long rest, so the idea of a dedicated healer is mostly obsolete (not that it was ever really useful). In my party we have a guy who took one level of cleric and he barely ever bothers healing beyond the Save The Dying cantrip (at will stabilize someone below zero)

In 5e it's be pretty hard to do dedicated healing because people can heal themselves so well and you only need to prepare one healing spell. You'd have to be pretty dumb not to sling around buff spells and stuff as well.

Battle clerics is always the best option
